Autumn in Copenhagen

Let’s talk about the apple martini. Google the recipe and you’ll find some bright green combination of vodka and apple schnapps. I envisioned a grown-up version with layers of fresh, fall flavor that looked like a Manhattan. As luck would have it, it came to me while happily strolling the streets of Copenhagen, biting into an apple I just bought at the local market.

    Ingredients

    • 2ounces calvados or apple brandy
    • 3/4ounce Fuji apple shrub*
    • 1/2ounce Yellow Chartreuse
    • 4dashes Fee Brothers Black Walnut bitters

    1.  Prepare *Fuji apple shrub by adding two chopped Fuji apples and 1 cup sugar to jar with tight fitting lid. Shake and place in fridge overnight. Strain out solids. Add 1 ½ cups apple cider vinegar and shake to combine. Continue to shake in 15 minute intervals until sugar is dissolved. Store in fridge.

    2.  Combine all cocktail ingredients in a shaker. Add ice. Shake and strain into coup or martini glass.
