- 2 pounds chicken pieces, skin on
- 2 cups flour
- kosher salt and pepper
- canola oil
1. Place 2 inches of oil into a heavy skillet. Heat until a piece of flour sizzles when tossed into it.
2. Place flour in a clean grocery bag. Wash chicken pieces in water, and toss into bag of flour. Shake well. Place chicken in hot oil. Fry on each side until golden brown, about 7 minutes each side. Place chicken on platter. Sprinkle with salt and pepper. Keep warm in oven until serving.
