Sunny Apricot Citrus Syrup

Necessity is the mother of invention. So when I found myself at my girlfriends with no breakfast options at all, I went to work. We made pancakes from scratch (with no buttermilk) which is easy enough. But the eureka moment was when I found a can of apricots in the cabinet. Those plus 2 oranges and some brown sugar and we had ourselves a bright vitamin rich citrus apricot syrup for our pancakes. Here comes the sun!

Ingredients

  • 1 (15-ounce) can apricots in heavy or light syrup
  • 2 oranges, sectioned (without membrane or skin)
  • 1/3 cup brown sugar

Preparation

1. Combine apricots plus juice or syrup, orange sections, plus juice and brown sugar. Simmer over medium heat for 15 minutes or until thick and aromatic. Serve warm or cold with pancakes, ice cream, cake or cheese. Makes 1 cup.
