Quick Bolognese Sauce

Traditional Bolgonese sauce, an unctous mixture of pork, beef, white wine, milk, and tomatoes, is simmerred for hours into a luxurious, hearty ragu. This quick one uses fresh tomatoes and smoky, bacon pork patties from Tn Grass Fed Beef for a quick, yet deep flavored, pasta sauce. If you dont have the bacon pork patties, use ground pork and 2 slices of baocn.

Ingredients

  • 8 ounces bacon pork patties (sliders from Tn Grass Fed Farm)
  • 1 cup chopped onion
  • 2 cloves garlic, chopped
  • 1-2 red bell peppers, diced
  • 6-8 tomatoes
  • 4 ounces red wine
  • 1 teaspoon salt
  • 8 ounces hot, cooked pasta, al dente
  • Romano or Parmesan cheese

Preparation

In a saucepan, place pork bacon patties in a saucepan. Heat 2 minutes. Add onion, garlic and red bell pepper. Cook over medium heat 10 minutes. Add tomatoes and red wine. Simmer covered for 30 minutes. Uncover and cook 10 minutes. Add pasta and cook for 5 minutes for it to absorb the sauce Serve with grated Parmesan or Romano cheese.
