Greens Braised with Pancetta and Apple Cider

Ingredients

  • 1 bunch collard greens or turnip or kale
  • 2 ounces pancetta, chopped
  • 1/2 cup chopped onion
  • 2 garlic cloves, chopped
  • 1 cup apple cider
  • salt and pepper

Preparation

1. Rinse and cut collard greens off stem. Discard stems.

2.  Place pancetta in large pot. Saute 5 minutes. Add onion and garlic and saute 10 minutes. Add greens; stir. Add 1 cup apple cider and cook 20 minutes to 1 hour. Season with salt and pepper to taste.
