Greens Braised with Pancetta and Apple Cider

I've never really known how to cook collards the old-fashioned Southern way, nor have I been that fond of them. But when a friend cooked farm fresh collard greens with pancetta, garlic, onion and apple cider, the aroma alone was mesmerizing. With their yummy, sweet apple cider broth, I could take a bath in these.-- Jill Melton, Editor.

Ingredients

  • 1 bunch collard greens (or turnip or kale), stems removed
  • 1 cup apple cider
  • salt and pepper

Preparation

1. Rinse and cut collarrd greens off stem. Discard stems. Place pancetta in a large pot. Saute 5 minutes. Add onion and garlic, saute 10 minutes. Add greens, stir. Add 1 cup apple cider and cook 20 minutes to 1 hour.
