Green garlic pesto for spring.
- 4 green garlic stalks, bottom and green part, chopped
- juice of 1 lemon
- salt and pepper, to taste
- 1/4 cup olive oil (or until pesto comes together)
- Place green garlic in bowl of food processor. Pulse until chopped small.
- Add lemon, salt, pepper and olive oil. Pulse until pesto comes together and is creamy.
- Makes 1 cup. Toss on pasta, pizza, or use as a spread on sandwiches.
