1. Preheat the grill to medium-high heat. In a large bowl, toss shrimp and veggies in olive oil and seasoning blend to coat evenly. Skewer mixture evenly onto 5 large skewers, alternating the shrimp and veggies as you work on each skewer.
2. Place the skewers on the grill and grill uncovered for about 3 minutes, turning once.
Grill for another 3 minutes or so, or until the shrimp just turn pink and vegetables are tender and slightly browned on all sides.
3. Remove skewers from grill, add more Bourbon BBQ Seasoning Blend, to taste, if desired, and let rest a couple of minutes before serving.
Serving Suggestion: Serve with rice or cubed roasted potatoes.
