- Preheat oven to 350F.
- Combine flours, baking powder, baking soda, salt, cinnamon and nutmeg. Stir well. Add walnuts.
- Combine egg, brown sugar, banana, oil and vanilla, stir well. Combine flour mixture with egg mixture and stir gently.
- With an ice cream scoop, divide mixture evenly between 12 greased muffin cups. Sprinkle with sugar and salt.
- Bake 15-20 minutes.
